Pork Fried Rice

Another easy recipe for when body refuses to function. You could change the meat, or add in some veg (ugh, don’t do green stuff!), the whole idea is that this is a base to work from.

Serves 4

4 Lean pork steaks cut into strips
1 cup rice
2 eggs, whisked, (salt & pepper if required)
1 cube frozen garlic
1 cube frozen ginger
1 teaspoon chinese 5 spice
Soy sauce
water
Spray oil

Set rice to boil as per pack instructions
Fry garlic, ginger & five spice with 2 squirts spray oil until defrosted
Add a splash of water to make a thin paste
Add pork and stir fry on high heat until sealed
Add soy sauce to taste
Reduce heat, cover, and simmer for 15- 20 minutes until meat is cooked through
Once rice is cooked, drain and set aside until pork mix is done
In a wok, use 2 squirts of spray oil & heat
Add eggs, cook for a minute until almost cooked, then add the rice. Add soy sauce if required
Combine pork mix and rice, stir through, and serve
